Data Entry 3000 mailing addresses

I need assistance with extracting names and mailing addresses from my monthly court records. 

These records come in various formats - Excel, PDF, and Word - and need to be compiled into a single Excel spreadsheet. - 

Task: Extracting names and mailing addresses from 15-20 court records monthly, totaling approximately 3,000 - 4,000 names.

 - Delivery: Court records are emailed to me monthly. I will forward the email lists to you - you extract the mailing addresses from the lists onto one spreadsheet
