I had already created a word document from a pdf and then I created a google doc document out of it.
I can convert documents from pdf to word. I can use an online converter but I can also convert from scratch. To input text I usually use speech to text which make typing a whole less cumbersome. I always double check to make sure the created word document matches the pdf as much as possible. The most tricky part, I have found is the specification of margins on the page and deciding what the text size should be.
